Tiny, single-celled microbes
living in the grease trap receive energy to live
from the wastes that enter the trap. The secrete
enzymes that break down oil, grease and other
organic matter into molecules that can be absorbed
through the microbe's cell wall. Carbon makes
up a large fraction of the microbial cell. In
addition to carbon, cell material is mainly composed
of hydrogen, oxygen and nitrogen. Carbon is supplied
by the oil and grease in the trap. Hydrogen and
oxygen are supplied by water. Usually the nutrients
in short supply are nitrogen, phosphorus or both.
Without these elements, microbial
populations become weak and unable to thoroughly
degrade oil and grease. When this happens, the
trap fills too quickly, resulting in foul odors
and a backed-up system.
